Follow the instructions here to learn how to select hair and other fine detail in a photograph. This is very useful when trying to cut something or someone out from the photograph, or to cut the background out from around them.

Also, here's a video on the Refine Edge tool that is new to CS5, should be a much quicker and easier way to cut someone out of a background, hair and all, especially if there's a plain background behind them.
